Sweet Potato Samosa Pops

Sausage & HashBrown Casserole: 2-lb. bag frozen hashbrowns, thawed & dried; 1 lb pork breakfast sausage; ½ onion, finely chopped; 8 eggs; ½ C. milk; 2 C. shredded cheddar cheese; 1 tsp salt; ¼ tsp pepper. Cook sausage & onion, drain. Whisk eggs, milk, salt, pepper & 1 C. cheese. Spread potatoes in bottom of sprayed 13x9 baking dish. Spread sausage on top. Pour egg mixture on top. Sprinkle remaining cheese over all. Cover with foil, Bake @ 375 for 30 min. Remove foil, & bake additional 10 min.
